THE MILL

          Between the clear waters of the Riacho Inhumas creek and a beautiful stand of march palm trees, the Reserva do Zito mill is located in Passagem Franca/MA, where the cachaça Reserva do Zito have been produced since 1945. Stored in barrels of golden trumpet tree, European oak or stainless steel, Reserva do Zito cachaças are handcrafted, obtained from manually cut sugarcane juice fermented by native yeasts. After fermentation, the distillation process is in a complemente in a copper still.


           Committed to the sensitive agenda of preserving the environment, Reserva do Zito makes use of solid end liquid residues from the manufacture of sugarcane juice in a sustainable manner. The vingasse is used to irrigate the cane fields and, in turn, the sugarcane bags serves as fuel for the steam boiler.


           Combining the alambiqueiro tradition - which passes from generation to generation - to the modernisation of equipment and the physical structure of it’s facilities, Reserva do Zito is in constant search of improving it’s manufacturing process and prides itself on presenting generous and spirited cachaças, marked for the originality of incomparable aromas and flavors.
